Best way to connect an AP on the ceiling

I need to mount a couple of grandstream APs on my ceiling. I have solid cat 6 cabled up to the location in the ceiling. I was originally going to just terminate the cable in the ceiling to a wall socket up there and run a pre made patch cable from their through a hole in the ceiling to the AP. But I realise now I'll have to make a pretty big hole to get the rj45 jack through. Is it possible to just drill a smaller hole pull through the cat 6 and terminate the plug with something like this?

I've terminated many wall sockets but never put one of these plugs on. Ideally a tool less option would be best as I don't have a clamping tool (or whatever they are called) for this specific job. I only need to do it for 2 (at this stage).

Or am I better just to stick with my original plan or running a patch cable from the AP through a hole in the ceiling? And if so, whats a good way to tidily cover that hole? Some kind of white rubber grommit?
